Frickdilles (frick-dill-ees)

This is another simple recipe that my grandmother would frequently make for us. Don't quote me on this, but I believe it's translated to Meatloaf in a pan.

Frickdilles

(this is the doubled recipe)
2 lbs hamburger
1 sm onion
1 tbsp garlic
4 eggs
1 1/2 c cracker crumbs
salt and pepper
2/3 c milk 
1 c of cream of mushroom soup

Place hamburger in large bowl. Add eggs, cracker crumbs, onion, and garlic. Mix well with your hands (it works best)
Form hamburger into small meatloaves and place into skillet to brown. Brown slowly and covered so  as not to dry them out. Salt and pepper them to taste.

 Once cooked through, mix together the soup and milk, then add to the hamburgers. (I use water as my lactose intolerance won't take the milk) I top with butter on occasion. Simmer for about 20 minutes.

These resemble Salisbury Steak, but take much less time. Makes a good gravy for mashed potatoes.
