This is a recipe that is served at our church on Wednesday night meals. I just love the taste of this soup! It's definitely a comfort food!
Cheeseburger Soup
1 med onion
3 cloves garlic ( or 1 tsp chopped)
1 lb lean ground beef
1 lb potatoes, washed and cut into small pieces
4 large carrots, peeled and cut into small pieces
32 oz of reduced sodium beef broth
1/4 c ketchup
2 tbsp mustard
1 tsp chipotle or chilli powder
Place a small amount of butter in pan and saute onions and garlic until almost caramelized. Add ground beef and brown. Strain meat.
In crock pot, pour beef broth, then add meat and onion mixture. Add potatoes and carrots, ketchup, mustard, and pepper. Cook for 4.5-5 hours on high.
For cheese sauce:
2 tbsp butter
2 tbsp flour
1 1/2 c milk
2 c shredded cheese
Melt butter in saucepan. Add flour and wisk till mixed. Slowly add milk, wisk until thick. Melt in cheese and add to soup. Cook one more hour.
Serve. Enjoy!
